ABOUT THIS COFFEE  From the Junin Region of Peru, this coffee has creamy notes of milk chocolate and roasted almonds.  Traditionally, Peru's small farm holders have used a micro-milling approach to cleaning their crop in order to avoid the waste water associated with large wet-mill operations. In recent years there has been a movement towards Fair Trade Certified Cooperatives in Peru, with an estimated 10-25% of the country's 10,000 small holders taking advantage of the power of the COOP and being able to export their crops at specialty prices instead of commodity.
